Easy Quinoa Dulse Salad


  • 1 cup uncooked quinoa
  • 2 cups water
  • 1/4 tsp sea salt
  • 1 ½ tbsp Extra Virgin Olive Oil
  • juice from half a lemon (fresh)
  • 1/2 cucumber with peel
  • 1 red, yellow or orange bell pepper
  • 1 ripe avocado (cut into slices or cubes)
  • 1 carrot (curled)
  • 2 green onions
  • 4 tbsp dulse flakes
  • Fresh ground pepper to taste


  1. Combine water, salt and quinoa and bring to a boil. Reduce heat to low cover and cook for 15 minutes or until quinoa has absorbed all water.  Remove from heat and let stand for 5-10 minutes.
  2. Slice cucumber pepper and avocado
  3. Curl carrot
  4. Chop green onions
  5. Combine oil and lemon juice and add fresh ground pepper to taste
  6. Once quinoa is cooled combine it with oil and lemon mixture and mix in the dulse flakes
  7. Dish out 1/2 cup of quinoa salad and garnish with parsley and green onion
  8. Arrange vegetables and avocado around quinoa or mix it all together, you decide!
