Clean Chicken Salad

Ingredients:

  • 2 cups cooked chicken (cubed) or approx 2 6oz chicken breasts
  • 2 celery stalks, chopped
  • 1/4 red onion chopped
  • 10 seedless red or green grapes, halved
  • 1/2 cup of 0% M.F. plain greek yogurt
  • 2 tbsp fresh lemon juice
  • 1/4 tsp ground black pepper
  • 1/2 tsp cumin
  • 1/4 tsp crushed red pepper flakes
  • 1/4 cup fresh chopped cilantro
  • 1/4 tsp garlic powder
  • 4 cups of spring mix or other leafy green of your choosing

Directions:

  1. In a large bowl mix together all ingredients except for spring mix
  2. Chill for 20-30 minutes
  3. Arrange approx 1 cup of mixture on top of greens
  4. Garnish with fresh lemon wedges and parsley
