Green Vitality Soup

Ingredients:

    • 1 cup broccoli, rough chopped
    • 3 cups baby or green kale, chopped
    • 1 cup white potatoes or baby yellow potatoes, cubed (skin on)
    • 1/2 cup onions, chopped
    • 2 cloves garlic, minced
    • 1 tbsp fresh ginger, minced
    • 1 jalapeno pepper, seeded and minced
    • 1/4 cup cilantro, fresh
    • 2 tbsp mint, fresh chopped
    • 1/4 cup fresh parsley, chopped
    • 1 cup coconut milk
    • 1 tbsp coconut oil, unrefined virgin
    • 4 cups vegetable stock (2x GoBio vegetable cubes with 4 cups boiling water)
    • 2 tsp sea salt (or other rock salt)
    • 1 tsp black pepper, ground

Directions:

1. Melt coconut oil in large sauce pan over medium heat
2. Add onion, garlic, ginger and jalapeno, saute until onions are soft and translucent
3. Add broccoli, potato and kale, saute for 5-6 minutes over low-medium heat
4. Add stock to pot so vegetables are just covered.  Add more if needed.
5. Bring soup to a boil and reduce to low heat and simmer, covered for 25 minutes
6. Add salt, pepper and all fresh herbs and simmer an additional 5 minutes
7. Use an immersion blender or other blender to puree soup to a smooth consistency
8. Return soup to pot and add coconut milk and more seasoning to taste
9. Simmer over low heat for 10 minutes stirring frequently
10.  Serve hot with coconut milk and mint leaves as garnish
