Mega Loaded Sweet Potatoes (Yam)

INGREDIENTS:

3 large Yam/Sweet Potato
1/2 cup black beans
1/2 cup Yogurt - Greek - Plain 0% Fat
Juice from 2 limes
1 red pepper, chopped
1/2 red onion, chopped
1/2 tablespoon Oil, olive, salad or cooking
2 cloves Garlic, raw, minced
1.5 tablespoons chili powder
1/4 tea spoon Sea Salt
1/4 teaspoon cumin

1/4 teaspoon paprika
1/8 tea spoon Pepper, Cayenne or Red
1/4 tea spoon Oregano - ground
3 tablespoons chopped green onion
1/2 cup Salsa - Tomato, no sugar added
3/4 cup, shredded Cheese, brick

DIRECTIONS:

1. Preheat the oven to 425 degrees F
2. Scrub the yams thoroughly with a brush, then pat dry.
3. Prick the yams with a fork.
4. Bake for 40 to 60 minutes or until tender.
5. Heat olive oil in pan over medium heat
6. Cook onions and garlic until onions are soft (about 5 minutes)
7. Add peppers, beans and 1 tbsp of chili powder and juice from 1 lime and cook for an
additional 5 minutes
8. Mix together all spices reserving 1 tbsp of chili powder
9. Add spice mix to greek yogurt and juice from the second lime and stir until combined, place in
the fridge to keep the mixture firm
10. Remove yams from oven and cut an oval shape on the top
11. Scoop out about 1/4 of the yam from the top and discard or save for another dish
12. Place 1/4 cup of grated cheese in the hollow portion of the yam
13. Place 1/3 cup of the bean mixture on top of the cheese
14. Place a dollop of the yogurt mixture on top and garnish with chopped green onion, cilantro
and salsa.
