• 3-4 sweet potatoes, approx 5" long (grated)
  • 1 small Onion, raw, diced
  • 1/2 cup Rice flour, brown
  • 2 large Egg - Free Run - Whole w/yolk
  • 1/2 teaspoon Baking Powder - Aluminum Free
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Spices, pepper, black
  • 1/2 teaspoon Spices, ginger, ground
  • 1/4 teaspoon, ground Spices, cardamom


  1. Preheat oven to 400 degress
  2. Grate sweet potatoes using the largest grate holes chop onion and lightly beat eggs
  3. Add all ingredients in a large bowl and combine well
  4. On greased baking sheet (or parchment paper) scoop out mixture in 1/4 cup servings and flatten with a spatula
  5. Bake for 20 minutes then flip latkes over and bake for another 10 minutes or until outside is crispy
  6. Garnish with some plain greek yogurt and chopped fresh parsley Note: Alternatively you can fry the latkes in a pan with coconut oil over medium heat for approx 2-3 minutes a side.

Makes 24 latkes (12 servings)
