INGREDIENTS:
- 10 medium whole Tomatoes, diced
- 1 small Onion, raw, diced
- 2 clove Garlic, raw, minced
- 1 each Vegetable Bouillon Cubes, GoBio
- 3 cup 8 fl oz Water
- 1 can (6 oz) Tomato paste, without salt added
- 1.5 cup Coconut Milk
- 1 teaspoon Sea Salt
- 5 tablespoons Coconut Sugar
- 8-10 leaves Basil, fresh, chopped
- 5 tablespoons Parsley, raw, chopped
- 1 teaspoon Olive oil
DIRECTIONS:
- In large pot heat olive oil over medium
- Add diced onion and minced garlic and saute for 1-2 minutes
- Add chopped tomatoes (seeds and all) to pot and cook 5 minutes over medium heat
- Add vegetable stock (GoBio cube mixed in 3 cups water) to pot
- Bring mixture to a rolling boil and then reduce heat to simmer
- Simmer for 20 minutes
- Remove from heat and let rest for 20 minutes or for up to an hour
- Add ingredients to a commercial quality blender (Vitamix or BlendTec) and blend until you reach a smooth consistency. You will have to separate and blend in 2 separate batches. Note: An immersion blender may be used but, this may result in a soup with far more texture
- Return pot to stove with combined soup and add all remaining ingredients (chopped basil, parsley, coconut milk, coconut sugar, tomato paste and salt) to pot.
- Stir frequently over low heat for 20-30 minutes
- Adjust seasonings to taste
- Serve hot with a drizzle of balsamic vinegar and fresh basil for garnish
