INGREDIENTS:
- 3 large Yam/Sweet Potato
- 1/2 cup black beans
- 1/2 cup Yogurt - Greek - Plain 0% Fat
- Juice from 2 limes
- 1 red pepper, chopped
- 1/2 red onion, chopped
- 1/2 tablespoon Oil, olive, salad or cooking
- 2 cloves Garlic, raw, minced
- 1.5 tablespoons chili powder
- 1/4 tea spoon Sea Salt
- 1/4 teaspoon cumin
- 1/4 teaspoon paprika
- 1/8 tea spoon Pepper, Cayenne or Red
- 1/4 tea spoon Oregano - ground
- 3 tablespoons chopped green onion
- 1/2 cup Salsa - Tomato, no sugar added
- 3/4 cup, shredded Cheese, brick
DIRECTIONS:
- Preheat the oven to 425 degrees F
- Scrub the yams thoroughly with a brush, then pat dry.
- Prick the yams with a fork.
- Bake for 40 to 60 minutes or until tender.
- Heat olive oil in pan over medium heat
- Cook onions and garlic until onions are soft (about 5 minutes)
- Add peppers, beans and 1 tbsp of chili powder and juice from 1 lime and cook for an additional 5 minutes
- Mix together all spices reserving 1 tbsp of chili powder
- Add spice mix to greek yogurt and juice from the second lime and stir until combined, place in the fridge to keep the mixture firm
- Remove yams from oven and cut an oval shape on the top
- Scoop out about 1/4 of the yam from the top and discard or save for another dish
- Place 1/4 cup of grated cheese in the hollow portion of the yam
- Place 1/3 cup of the bean mixture on top of the cheese
- Place a dollop of the yogurt mixture on top and garnish with chopped green onion, cilantro and salsa./li>
